Junto was one of the first three roasters that Roastful ever featured in our subscription box, and that’s where we got to know Matt Patch, former head roaster at Junto Coffee, and current roaster and owner of Patch Coffee. We’ve always loved and respected what Matt is doing in the industry, so we jumped on the opportunity to feature just his second release in our May box this year.
Diego’s coffee needs no introduction. A lovely thermal shock pink bourbon that is slightly less process-forward than some of the other thermal shock coffees we’ve featured here at Roastful, it has a nice and delicate stone fruit forward profile. While it has a really nice floral profile at slightly longer ratios (1:17-1:18), We’ve really enjoyed the rich and sticky stonefruit profile that is present in more modest ratios (1:16-1:16.5).
A great friend of Roastful, Rowan is on their second year roasting, and they are roasting some really consistent, clean coffees. This offering from Rowan is a really nice and sweet washed coffee that has a really complex acidity as it starts to cool down. It’s a great easy drinking cup that will surprise you with some nuance here and there.
We’d recommend just brewing this coffee with a pretty standard recipe, maybe somewhere around a 1:16.5-1:17 ratio. When brewing, we do notice that if you are brewing with too many pulses, this coffee can begin to lose some of that acidity that makes it interesting, so maybe keep it a relatively simple recipe with minimal pulses.
First time in the box! We met the folks behind Prophet a few weeks ago and wanted to feature them in our box. Zach McCutchen from Prophet really prioritizes sweetness in his roast profiles, and this rounder naturally processed is a great example of that and pairs well beside the more floral coffee from Patch and clean-sweet coffee from Rowan.
We’d recommend dropping brewing temp from boiling to 200 for this coffee- this will help maintain a higher acidity and clean cup profile.
