This month’s box features three roasters from our Top 50 Roaster list! You may also notice another theme based on our coffee selections. All three coffees are pink bourbon and all from Huila, Colombia. This is one of our favorite varieties and coffee growing areas in Colombia - a great theme to feature alongside some of the best roasters on the planet!

What we love about this coffee

There are few roasters we enjoy as consistently as Calendar Coffee. Calendar was actually one of the first roasters from outside the US we featured in our Roastful boxes - and several years later we’re just as excited to feature them again.

How we're brewing it

One thing that has always surprised me about Calendar’s coffee is how soluble they are in combination with how light they are. Expect a sweet cup with a vibrant acidity that pairs well with a 1:16-1:16.5 ratio.

What we love about this coffee

The #1 US roaster on our list is one we’ve featured many times before - if you’re a long time Roastful subscriber, there may not be another roaster you’ve had more of. We’re never disappointed with the coffees we get from Passenger, this coffee is no exception. We’re extra excited to feature this particular coffee - it’s a farm that some of the guys at Osito Coffee (a Green Sourcing company) started. Working with Hex Coffee, we’re very familiar with Osito and have a ton of respect for them.

How we're brewing it

We enjoy almost all of Passenger’s coffees pushed to higher ratios. Look to push this coffee to a 1:17/1:17.5 on regular brewing methods, and on no-bypass brewing methods 1:18-1:20.

What we love about this coffee

A first time in the box! We’ve wanted to feature La Cabra for a long time, and we’re so excited to celebrate our top 50 roaster list with one of our favorites.

How we're brewing it

This coffee is very sweet; look to capitalize on that sweetness with shorter ratios (1:16-1:16.5). However, we’d recommend for you to test out slightly coarser grind size than the other two coffees in the box.
