Mejorado is one of our favorite varieties, and one that we pounce on when we see an opportunity to feature it. Expect a light and floral cup profile from this coffee.
When grinding a bit finer, we do notice to see less of the floral quality in the cup, yet there is a more fruit forward cup with a citric acidity in that finer ground cup. If you want a bit more florals present, try grinding a bit coarser and extend your ratio a bit.
Frukt’s coffee never disappoints us. We believe that a roaster is only as good as their worst batch (and we say that from a roaster’s perspective also, given Zack is also a coffee roaster), and we can confidently say we’ve never had a poorly roasted coffee from Frukt.
Expect a really sweet, classic washed Ethiopian profile with this coffee. It doesn’t have quite the same clogging problems as many washed Ethiopian coffees due, and apart of this is a slightly more rounded roast profile from Frukt. However, if you do run into clogging with your brew, grinding coarser won’t necessarily help, rather, look to agitate your brew less.
We became familiar with Isaias’s coffee back in 2019/2020 when Zack competed using some of his coffee in the US Brewers Cup. Like the variety Mejorado mentioned above from Ilse, when we see Isais’s coffee available, we pounce on the opportunity to feature it.
When brewing this coffee, keep in mind that it’s much more soluble than the other two coffees in the box. Higher solubility definitely isn’t a bad thing, it can make your brewing a bit more flexible, but don’t go too fine on this coffee or you may miss out on some of the acidity you might notice in slightly coarser brews.
