A fan favorite roaster making their 2025 premiere in the January box! Passenger’s quality has never wavered over the lifespan of their business and they are still quietly roasting some of the best coffee in the country over in little Lancaster. It’s not often we get to feature a geisha in our classic box- and this one from Ruther Quispe is nothing short of what we love in Gesha with its rich depth of flavor and high quality acidity.
You can go pretty fine on this one and preserve the acidity and nuance in the cup. Stick to boiling temps, grind fine, and push out some high extractions on something like the column dripper or the pulsar
After making their Roastful debut last year, Hydrangea is back with us to kick off 2025, and we’re sure this won’t be the last time you’ll see them ;) we’re featuring a yeast inoculated Ethiopian lot this time that is nicely delicate and floral.
205 brewing temps and REST (let this one sit for another week or two). Right now coarser grind settings may work better coupled with something like a no-bypass brewer- though I wouldn’t recommend something like an aeropress as you’re going to lose out on what makes this coffee fun (florals and other delicate flavors).
A new roaster in the world of Roastful! Kolibri reached out to us last year and sent us some yummy samples that we were very much happy with, and so we decided to pull the trigger and get them into a box to kick off an awesome 2025. Kolibri is roasting on a Stronghold- which isn’t quite as common (though certainly becoming much more common) as some other machines- so it is interesting to try a production roast of this coffee roasted on what some may say is the future of roasting technology!
We have had good results with below boiling temps (something between 202-205) on this coffee, as well as potentially some finer grind settings as it’s relatively soluble.
