What we love about this coffee

One of the hottest roasters in the world right now is September coffee- and for good reason. Roasting at a high level as light as they do is a difficult task at hand- but we feel like they’ve done a rather good job with this Washed Ethiopian land race variety grown by Jose Martinez in Colombia.

How we're brewing it

This one needs a bit of rest- but by the time you’re reading this it’s definitely already opened up a good bit. Give this one another few weeks and it will likely be a lot easier to brew- and then at that point using something like a no-bypass brewer like the column will really help make sure you’re getting a full- structured cup of this delicate coffee.

La Cabra

What we love about this coffee

World renowned roaster La Cabra opened up their US roasting operation recently and they seemed to not have skipped a beat- in fact, we think their quality may have even increased! Costa Rica Altos is one of their seasonal menu staples every year and for good reason- expert processing leads to a really clean and “elegant” natural, as La Cabra might put it.

How we're brewing it

We really enjoy this coffee at lower ratios like 1:16 or 1:16.5- for the style of processing and roast profile it lends itself to being a bit sweeter and rounder than the other coffees, but when ratios are pushed out a bit further it tends to be missing some of what makes this coffee really enjoyable- such as the aforementioned sweetness and roundness.

What we love about this coffee

Do they need an introduction? It would be hard to find a roaster on planet earth that cares about their quality more than Sey. We’re constantly impressed with not only their coffee quality but their hospitality and service from the mighty team over in Brooklyn. This ”Dry-honey” Ethiopian is one of the best Ethiopian coffees they had tasted all season, and we’re lucky enough to get to feature it.

How we're brewing it

This one also needs a bit of rest- flavors are a bit tight right now but will open up a lot in maybe a week or so. That being said this coffee is best at longer ratios or with a bit of dilution- we brewed this one at a 1:17 and diluted a bit and found some of those tropical notes to be more expressive.
