What we love about this coffee

Will (founder) sent us a few samples a couple of months ago and we were really impressed with how light he was roasting, yet how crisp and balanced his coffees were. Here at Roastful we love our big roaster friends, but we also love to find the smaller, newer roasting companies- like Botz a few years ago, and look where Danny and Botz are at now! I think the same could very well be the case for Mirra, not too long in the future…

As for the selection, we’ve got a wonderful Pacamara variety produced by Acacia Hills- a really stellar farm headed up by Leon Christianakis. Expect a tropical cup full of sweetness as it cools, especially if you follow our recs on brewing!

How we're brewing it

The coffee is relatively easy to brew for how light it is. We found some more desirable flavors at a slightly finer grind than normal and a slightly lower brew temp (around 200 F).

What we love about this coffee

On the flip side of a smaller roaster like Mirra is a bigger, well known and established roaster like Assembly. They’ve been doing it so consistently for so long, and this coffee is no different. From the famous farm El Vergel we’ve got a coffee named after the section of the farm where the bananas and guavas grow (no, it’s not a co-ferment!). It’s sweet and round, yet still very clean. We think even the washed coffee lovers (like ourselves) will enjoy this coffee!

How we're brewing it

Again, this coffee is relatively easy to brew. While it gets bigger and sweeter the finer you grind- we tend to really enjoy the acidity that is highlighted at a pretty average to coarse grind setting.

What we love about this coffee

Carlos (founder) and his accomplishments speak for themselves. He is a Colombian brewers cup champ as well as an Australian Brewers Cup champ, and he has now taken his expertise in the industry and focused it in his new roasting company Differente. Differente is sourcing a lot of competition level lots, and this Aji variety is definitely one of those types of coffee- with an extensive fermentation process, this one is a bit different from the typical Roastful selection, but hey, would we be doing our job well if we didn’t get you outside of your comfort zone once in a while ;). Expertly roasted and really sweet, we think you’ll enjoy getting to taste this coffee grown by Luis Aníbal and roasted by Differente.

How we're brewing it

The most soluble coffee of the bunch, you’ve got a lot of room to play around with this coffee. Lower than boiling temps are where we found this coffee tasting the juiciest, especially if you grind a lot finer!
